Cornbread or Corn Muffins

1 1/3 cups flour 
2/3 cup corn meal
1/3 cup sugar
1/2 cup corn flour*
5 teaspoons baking powder
1/2 teaspoon salt
1 1/3 cup milk
5 tablespoons unsalted butter, melted
1 small egg, beaten

*available in most health food stores

Combine all dry ingredients and mix well, breaking up any lumps. In a separate bowl combine wet ingredients. Gradually mix in dry ingredients blending just until large lumps are broken up. Do not overbeat.

For bread: pour mixture into greased 8x8-inch pan and bake at 350F until golden brown, about 55 minutes.

For muffins: spoon mixture into 12 greased muffin cups. Bake at 350F for 45 minutes. 

Remove from pan and serve immediately.
