Granola



6 cups old fashioned oats  
1 cup coconut  
1/2 cup brown sugar  
1 teaspoon cinnamon  
1 pinch nutmeg  
1/2 to 1 cup cashew pieces  
1/2 teaspoon salt  
1/2 cup honey  
2 tablespoons vegetable oil  
1 teaspoon vanilla extract   
2+ handfuls of dried cranberries


Preheat over to 350°F. Mix first seven ingredients in a large bowl and set aside.  In class measuring cup or bowl, heat honey oil and vanilla extract in microwave for 1 minute.  Pour honey mixture over dry ingredients and stir until well coated.  Spread onto a lightly greased cookie sheet.  Bake for 8 minutes, stir, and bake for an additional 6-7 minutes.  Cool completely and add in dried cranberries.  Store in an airtight container.
