Turkey Breast in the Crock Pot

4 to 6 pound turkey breast (bone-in or out - your choice)  
2 cups cheap white wine, or broth
1 stick of butter  
1 onion    
salt and pepper  
fresh rosemary


Rinse the turkey and pat it dry.  Cut off any undesired skin and discard.  Salt and pepper the breast.  Put it in the crock pot breast side down. 

Coarsely cut up an onion and put into the rib cavity and around the breast.  Cut the stick of butter into pats and insert under the skin, place in the rib cavity and where ever else you can find to put it.  Pour the wine over the top and if you have fresh rosemary lay a few sprigs on top of the turkey breast.

Cover and cook on low for 7-9 hours or on high for 4-6.  I think we cooked ours on medium for 6 or 7 hours.  Remove from crock pot and let sit 20 minutes before carving.  This turkey breast turned out amazingly tender and flavorful.
