Light Greek Dressing

1/4 cup white wine, dry-variety   
1/4 cup fresh lemon juice   
1 medium shallot, minced, or more to taste  
2 teaspoon sugar   
1 teaspoon Dijon mustard   
2 tablespoon olive oil, extra-virgin   
1 tablespoon dill, fresh, chopped   
2 teaspoon fresh oregano, chopped   
1 teaspoon parsley, fresh, chopped   
1 teaspoon kosher salt   
1/4 teaspoon black pepper, freshly ground    

Put all the ingredients in a mason jar and give it a good shake.  This is especially good the next day with feta and, of course, a salad.
