- 1 pound broccoli florets, cut into bite sized pieces
- 4 scallions or 1/4 cup onions, chopped
- 1/4 cup Craisins
- 1/4 cup plain Greek yogurt (can also use vanilla yogurt and cut back on sugar)
- 1/4 cup lite mayonnaise
- 2 tablespoons white vinegar
- 3 teaspoons sugar
- salt and pepper to taste
- Finely chop broccoli and scallions/onions. Toss in Craisins.
- In a large bowl, combine Greek yogurt, mayonnaise, vinegar and sugar. Pour over broccoli mixture and gently combine until dressing is distributed evenly.
- Chill in refrigerator for at least one hour before serving.
- If you don't mind the extra fat and calories you can add:
- 1/2 cup chopped pecans
- 4 oz colby jack or cheddar cheese, cut small pieces
- 2 strips of bacon, cooked and crumbled
