Broccoli Salad

  • 1 pound broccoli florets, cut into bite sized pieces
  • 4 scallions or 1/4 cup onions, chopped

  • 1/4 cup Craisins

  • 1/4 cup plain Greek yogurt (can also use vanilla yogurt and cut back on sugar)
  • 1/4 cup lite mayonnaise
  • 2 tablespoons white vinegar
  • 3 teaspoons sugar
  • salt and pepper to taste

  • Finely chop broccoli and scallions/onions.  Toss in Craisins.

  • In a large bowl, combine Greek yogurt, mayonnaise, vinegar and sugar. Pour over broccoli mixture and gently combine until dressing is distributed evenly.

  •  Chill in refrigerator for at least one hour before serving.

  • If you don't mind the extra fat and calories you can add:
  •  
  • 1/2 cup chopped pecans
  • 4 oz colby jack or cheddar cheese, cut small pieces
  • 2 strips of bacon, cooked and crumbled
