Potato Salad

6 medium red potatoes, diced, boiled and refrigerated
1/4 cup green onions, chopped

1/4 cup celery, chopped
pickles if desired, dill or sweet, diced
1/2 cup mayo
1/2 cup plain yogurt
1 tablespoon sugar
2 tablespoon mustard
1 tablespoon white wine vinegar
1 1/8 teaspoon garlic powder

1/2 teaspoon salt
1/4 teaspoon pepper


Cut potatoes into 1/2 inch pieces; place in a medium saucepan. Add water to cover. Bring to boil; cover, reduce heat, and simmer 15-20 minutes or until tender. Drain and cool in refrigerate over night if possible.


Combine chopped green onions, mayo, yogurt, sugar, mustard, vinegar, garlic powder, salt and pepper.  I let this sit overnight, as well.  

Gently toss potatoes with the dressing.  Chill until ready to serve.
