Crock Pot BBQ Beef

2 1/2-3 pound beef chuck roast
garlic salt
3 cups Sweet Baby Ray's BBQ Sauce
2 teaspoons stone ground mustard
1 tablespoon A.1. sauce
2 teaspoons liquid smoke
6 tablespoons brown sugar
3 tablespoons Italian dressing
 
Rinse roast and place in crock pot.  Sprinkle with garlic salt.
 
In a bowl mix all the other ingredients together and stir well.  Pour HALF of the BBQ mixture over the roast and cook it for 6 hours on medium heat.  Refrigerate remaining sauce.

After the 6 hours pour off the sauce, shred the roast with a fork and return to crock pot.  Cover with remaining sauce and cook for another hour.
 
This is yummy with sauteed onions.  You will need:

2 large onion, sliced into rings
2 tablespoons butter 
1/2 cup beef broth
1 tablespoon soy sauce
 
Heat the butter in the skillet and add the onions.  Saute them for about 10 minutes until soft and translucent. Pour the broth and soy sauce over them and simmer for them 2 more minutes or so.
